What is Fantasy Fudge?

Fudge might be a little sinful, but it’s also too delicious to turn down. Especially Fantasy Fudge, also known as Marshmallow Creme or Marshmallow Fluff fudge.

It’s a creamy and nutty twist on the classic dessert made of – you guessed it – marshmallow.

Add in the chocolatey goodness of fudge and you’ve got two of the most delectable sweets in one.

I’m not even waiting for Christmas because this recipe is just too good. Plus, it’s incredibly simple to make, so you can enjoy it all year long.

In fact, you can make a batch, freeze it, and enjoy this sweet sensation for up to a year!

Ingredients

You’ll only need seven simple ingredients for this recipe. And you probably have most of them in your kitchen already!

  • White sugar. Use plain, white granulated sugar for this recipe — not powdered sugar or even the organic stuff. Anything other than typical granulated sugar can cause your fudge to feel grainy.
  • Margarine. I typically use margarine because I like how easily it melts. However, you can substitute real butter if you prefer.
  • Evaporated milk. Use full-fat evaporated milk, not a low-fat version or something else. Sweetened condensed milk won’t work, either. Full-fat evaporated milk is the only way to go.
  • Semisweet chocolate chips. Use a high-quality brand of chocolate chips that you enjoy. Remember, this is where all the chocolatey flavor will come from, so don’t buy the cheap stuff.
  • Marshmallow cream. You won’t get the light, wonderful texture without this ingredient.
  • Chopped walnuts. I like walnuts, but you can use whatever nuts you enjoy most.
  • Vanilla extract. A simple flavor enhancer that makes everything else taste better.

How to Make Fantasy Fudge

This recipe takes just 20 minutes to make, including cooling time. It yields 3 pounds of Fantasy Fudge.

1. Prepare. Grease a 9 x 13-inch baking pan with butter or margarine.

2. Mix the ingredients. Combine the sugar, margarine, and evaporated milk in a large saucepan over medium heat.

Stir well until the sugar dissolves fully, then bring the mixture to a boil. Boil for 5 minutes, stirring the entire time.

3. Add the chocolate. Remove the mixture from the stove and stir in the chocolate chips. Continue stirring until the chocolate is fully melted.

4. Add everything else. Once the chocolate melts, add the marshmallow creme, walnuts, and vanilla extract. Beat until everything is well mixed.

5. Cool. Pour the fudge into the prepared baking pan. Let it cool until it’s firm. Then, slice it into evenly sized squares. Enjoy!

Tips and Tricks

Here are a few tips to remember:

  • Stir constantly. The secret to making this classic Fantasy Fudge recipe the richest and creamiest you’ll ever have is all in the stirring. Make sure to never stop stirring, especially while the mixture is over the heat source. You want your fudge to be evenly smooth and creamy with every bite (except for the walnuts!) so it’s important to CONSTANTLY STIR.
  • Fully incorporate the chocolate chips. Again, this is a matter of stirring. Stir, stir, and stir some more until every last chip has melted. Don’t leave some of them unmelted.
  • Use butter instead of margarine. Doing so will give you an even smoother flavor.
  • Vary the nuts. Try crushed almonds, cashews, or pecans for a different flavored crunch. Furthermore, add a few nuts ON TOP of the fudge for extra flavor and texture.
  • Don’t be square! If you’re making the fudge for a special occasion or perhaps giving it to someone as a gift, you can use different kinds of cookie cutter shapes to portion the pieces. Try a witch’s hat for Halloween or some heart-shaped treats for Valentine’s Day. Just be sure the fudge is fully set. Otherwise, it may not hold its shape.

Can You Make Fantasy Fudge in the Microwave?

You can easily make this fudge in the microwave.

If you’re living in a dorm or you’re not too confident with your cooking, don’t worry. You can still have this decadent treat.

You’ll be needing the same ingredients. Follow these steps to make the fudge:

  1. Melt your margarine in a microwave-safe dish.
  2. Add the sugar and milk.
  3. Pop the mixture in the microwave again for another 5 minutes on high to bring it to a boil.
  4. Remove the mixture from the microwave and stir.
  5. Return the bowl to the microwave for another 5 minutes on high.
  6. Remove from the microwave and stir in the chocolate chips until melted.
  7. Stir in the marshmallow creme and vanilla.
  8. Transfer the fudge to a prepared baking dish.
  9. Let it cool, then slice it into squares.

Super simple and still super delicious!

How to Store Fantasy Fudge

Wondering how long you can keep your Fantasy Fudge? There are three ways to store it!

  • Store it at room temperature. Place the fudge in an airtight container somewhere cool and out of direct sunlight. It should last up to 2 weeks.
  • Refrigerate it. Again, you’ll need an airtight container. However, refrigerating it should make it last up to a month.
  • Freeze it. More on this below.

No matter how you store your leftovers, make sure they’re in an airtight container to keep any unwanted moisture out.

Another tip you can follow is to separate each piece with parchment paper. This will help prevent sticking and help the fudge retain its shape.

Can You Freeze Fudge?

If you really want to save some for a rainy day, you can freeze the fudge for up to a year.

Be sure to double-wrap the pieces and then put them a freezer bag or an airtight container.

For best results, wrap the first layer in aluminum foil and the second layer in plastic wrap.

To thaw frozen fudge, simply move it back to the fridge and let it thaw overnight.

What is the secret to perfect fudge? ›

Why did my fantasy fudge turn out crumbly? ›

If it doesn't boil, your fudge will end up too mushy, and if it cooks for too long, you'll end up with a dry, crumbly mess. This is why many recipes recommend using a candy thermometer, so you know exactly when to remove your mixture from the heat.

What ingredient makes fudge hard? ›

Too cooked

At this temperature, the sugar is too concentrated and there is not enough water left to form syrup around sugar crystals. The result is hard and brittle fudge. To save the fudge, put it in a saucepan with 45 to 60 ml (3 or 4 tbsp.)

Why isn't my fantasy fudge creamy? ›

If your fudge is crumbly, it means that you cooked it for too long. Too much water evaporated during the cooking process, and not enough moisture was left behind, which is what creates the dry crumbly texture. Be sure to set your timer and remove the saucepan from the heat the second it goes off.

Why is my fantasy fudge oily? ›

If your fudge is heated too much during the mixing process, or if the ingredients are insufficiently mixed together, the butter fat will separate itself from the liquids in the mix and rise to the top of the fudge, forming greasy pools.

Can you reboil fudge that hasn't set? ›
