This fajita seasoning is a blend of spices and herbs, all mixed together to create the perfect flavor enhancer for any type of fajitas. Skip the store bought seasoning and make your own instead, you’ll be glad you did!

I like to make my own spice blends whenever possible, they taste way better than the store bought version and don’t contain any preservatives. Some of my favorites include BBQ rub, Cajun seasoning and this zesty fajita seasoning.

I happen to love fajitas, you simply can’t go wrong with juicy meat, tender veggies, and all the toppings. My fajita seasoning produces fantastic results every time, and also happens to be quite easy to make.

What is in fajita seasoning?

This seasoning mix is a combination of dried herbs and spices that you probably already have on hand.

  • Chili Powder: This recipe calls for American chili powder, which is a blend of mild chilies, cumin, garlic and other spices. Some international chili powders are just ground up hot peppers, and that’s not what you want to use here.
  • Garlic Powder: You can’t have fajitas without garlic! I often add a teaspoon or two of fresh minced garlic to the pan when I cook my meat and veggies.
  • Onion Powder: This ingredient adds a savory note that rounds out the flavor of the spice blend.
  • Cayenne Pepper: If you like a little heat to your fajitas, add cayenne pepper. If you’re spice adverise, you can leave it out.
  • Oregano: Dried oregano is a common ingredient in Mexican food, which is why you’ll find it in many spice blends.
  • Smoked Paprika: I love to add smoked paprika because it adds such a complex, and of course smoky, flavor to my meals.
  • Cumin: This is a traditional ingredient in Mexican cooking and is found in many types of fajita seasoning.

How do you make fajita seasoning?

To make this recipe, place all of the different spices along with oregano, sugar, salt and pepper in a bowl.. Stir to combine the ingredients. Use the seasoning right away, or store it in an airtight container for up to 3 months.

Tips for the perfect spice blend

  • I often make a double or triple batch of this fajita spice so that I always have some on hand.
  • Don’t be tempted to use regular paprika instead of smoked paprika. The smoked version adds a ton of flavor and is in the spice aisle of many grocery stores.
  • I recommend using freshly ground black pepper for the best flavor.
  • Chili powder sometimes comes in different heat levels. I often use a mild chili powder, but if you like spicy food, you can use medium or hot chili powder.
  • There are two types of oregano that are typically sold at the store; Mexican and Mediterranean. For this recipe, it’s best to use the Mexican oregano if you can find it.

How much seasoning do you use for fajitas?

You’ll want to use 1 1/2 tablespoons of fajita seasoning per pound of meat. I recommend seasoning the meat and vegetables with salt and pepper, then cooking both items in a little oil until the meat is browned and cooked through and the vegetables are tender. Add the fajita seasoning and cook for another 2-3 minutes, stirring constantly. Serve the fajitas with your favorite toppings such as cheese, guacamole, sour cream and pico de gallo.

  • 2 tablespoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper optional
  • 1/4 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 2 teaspoons ground cumin
  • 2 teaspoons kosher salt
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon black pepper

Instructions

  • Place all of the ingredients in a small bowl.

  • Stir until everything is well combined. Use immediately, or store in an airtight container for up to 3 months.
