On Friday, I told you guys in my Berry Banana Bread post, that I’m typically more of a chocolate chip muffin person, while Trevor is more of a blueberry muffin lover.

I had already made chocolate energy bites (you seriously need to try these Almond Butter Energy Bites <– so freaking good), so I thought I’d do a little something special and make Trevor Blueberry Muffin Energy Bites for those times when we want to stuff our faces with muffins, but should prooooobably be making a healthier choice.

Enter: energy bites.

Super healthy. Super easy. No-Bake <– BONUS since it’s been like 90% humidity the past week. And hellooooo tastes like a muffin.

Ingredients

  • 1 cup old fashioned oats gluten free if necessary
  • 1/2 cup dried blueberries
  • 1/4 cup vegan vanilla protein powder I used Bob's Red Mill
  • 1 tablespoon ground flaxseed meal
  • 2/3 cup cashew butter *
  • 2 tablespoons pure maple syrup
  • 1/4 teaspoon cinnamon

These bites will be around 130 calories. That being said, I didn't list the nutritional information, because it will vary greatly based on the protein powder you use!

*I've used Jiff's cashew butter and YumButter.

    Blueberry Muffin Energy Bites Recipe - w/ Vanilla Protein Powder (15) I made them over the weekend so that I had something healthier to snack on instead of all the bad choices currently sitting in my pantry… and I am so happy I did! They were fantastic – blueberry-ey, vanilla-ey, chewy! I used my large cookie scoop and ended up with 10 energy bites 🙂 Making these again for sure!

    Blueberry Muffin Energy Bites Recipe - w/ Vanilla Protein Powder (16) I went on the hunt to get all the ingredients for these and I cannot seem to find the Bob’s protein powder anywhere! I went to Whole Foods, Fresh Mart, Kroger, Farm Fresh and only Whole Foods, one of the ladies that works there said she had a customer a few weeks ago looking for it as well. I guess it’s a new product? My mom has some French vanilla protein powder I will use until I find Bob’s version. Hope they will turn out the same. I see how you mentioned the cookie scoop! 😉 I am still on the hunt for that too. I only keep finding ice cream scoops and I think they look too big to use. Well, if you know of a local store that is selling Bob’s protein powder, I would love any suggestions! I haven’t tried Trader Joe’s, maybe they might? The hunt continues. Thanks again for your great recipes! These will be great, along with your almond bites, to get me through my surgery in 2 weeks!Thanks again! Laura 🙂

      Hi Laura! Oh no!! That happened to me when I was looking for lo mein noodles. Still can’t find them. 😉 I bet the French vanilla protein powder is amazing in these bites! When I opened the link, it was on medium, but there’s 3 sizes, just want to get the right one. If I can’t find the protein powder local, then I’ll definitely order it from Amazon.       Hi Kim! It’s really going to depend on the protein powder you use, but a rough estimate (using Bob’s Red Mill Vanilla Protein Powder) would be 12 carbs per bite. I hope that helps! 🙂
